You
will need:
175g
each of self-raising flour, butter or margarine and castor sugar,
3 eggs, 2 tablespoons of milk, jam for filling,
Butercream:
50g butter and 50g icing sugar
Method
Set
the oven to 190°, gas mark 5. Grease two 18cm cake tins.
1.Beat
together the butter and sugar.Gradually add the eggs to the mixture.
2.
Add theflour and fold in.
3.Spoon
the mixture into the cake tins.
4.Bake
for 20 minutes.
5.Let
the cakes cool. They should feel springy under your paw.
6.
Arrange on a plate. Serve with crisps and fruit
